Oven-roasted ratatouille

Renee?s Favourite Recipe

1 red onion, finely sliced
1 medium eggplant, cut into 3 cm cubes
1 red capsicum, deseeded and cut into 3cm pieces
1 green capsicum, deseeded, cut into 3 cm pieces
2 zucchini, cut into 2cm thick slices
2 x 400g cans diced tomatoes
1/2 tsp dried oregano
2 garlic cloves, crushed
160g fresh low-fat ricotta, crumbled
8 fresh basil leaves, shredded

1. Preheat oven to 200c. Combine onion,
eggplant, capsicum and zucchini in a
roasting pan. Spray with oil and gently
toss. Roast for 30 minutes.
2. Stir in tomato, oregano and garlic.
Roast for a further 30 minutes or until
tender. Taste and season with salt and
pepper.
3. Scatter over the crumbled ricotta
and basil. Bake for a further 10 minutes.
4. Spoon into serving dished. Serve.

Tax Update - Car FBT Records

The Tax Office has warned that some employers are using inaccurate methods in dealing with their fringe benefits tax (FBT) obligations resulting from the provision of car benefits to their employees.

Three areas where employers have been found to be making errors are:
- the car log book does not provide enough information about the use of the car,
- where the car is garaged at an employee?s residence and the employer, using    
   the operating cost method for calculating FBT, claims that the car has
   substantial use but there is no record in the log books of business travel being
   undertaken,
- employee contributions are incorrectly treated for income tax and/or GST
  purposes.

An employer using the operating cost method to calculate the taxable value of a car fringe benefit must include the following for each business journey:
- the date on which the journey began and ended,
- the odometer readings at the start and end of each journey; and
- kilometres travelled and purpose of the journey. Each entry must be in English and detailed enough to show why the journey was for business. Simply
describing the journey as ?business? or ?miscellaneous business? is not sufficient.
